It all starts from the tannery, from the choice of leather, the alcination/hair removal: it is the phase in which the chemical destruction of the epidermis and the subcutaneous adipose layer occurs and in which the regulated hydrolysis of the dermis begins.
To then move on to mechanical operations include fleshing, trimming, splitting, i.e. the removal of excess dermis takes place through the fleshing machine.
